Collaboration with White Labs CPH
The nose of The Golden Bear starts out all dank goodness and sweet starburst but once it hits your pallet it flips to wonderful earthy, lemon grass characters. This medium body, balanced West Coast IPA gives all the desired traditional dankness you want from a West Coast but doesn't leave your pallet fried, allowing you to keep coming back for more.
White Labs provided WLP090 San Diego Super Ale Yeast to step up our hop additions with this brew. We went with Centennial and Chinook on hot side then dry hopped it with Amarillo, Simcoe and Columbus on the cold side. WLP090 gives a neutral flavour, has a high alcohol tolerance (making super flexible to use regardless of final gravity/abv), and provides high attenuated finished product bringing a lovely dry finish.
